Well, I have to say yes. Today we ate fish head soup, compliments of my husband. I can’t say I had ever had a desire for fish head soup, but it wasn’t bad.
We also ate Cassava Pone. That was good too, but I got frustrated making it. Tim had to go climb the coconut tree, use the machete to cut down a coconut, then use the machete to hack off the outer husk, then he used a hammer and nail to get the coconut water out and break the shell to get the meat out. I was having trouble getting the meat out. Steve came and used the machete to break more of the shell for me. I then cut the pieces of coconut small and put them in the blender. I also added the Cassava because it had some liquid in it. I should have just added the liquid from the recipe. After much ado I dumped these ingredients in and looked at the recipe. Next I was to grate some pumpkin. I had used all of the liquid so I would have to grate this by hand. Where was that grater? All of this for a new dish? The girls came and helped me. Cassava pone is pretty good! I kinda wish we hadn’t liked it.
Next we started some Tamarind (or however you spell it). You break these pods open, remove the gummy beans, take the strings off of them, and place them in a container which you fill with water. Let this sit for a day or so, beat it up to get the gummy stuff off of the beans and into the water, add sweetener and there you have your drink. We’re making about 3 gallons of it. It’s tasty!
We’ve also learned the difference between coconut water and coconut milk. The water is good to drink and then you can eat the jelly. You get this from a green coconut. From a brown coconut you can get the coconut we are familiar with in the States. This can be grated and water added. Blend in blender. Strain out the coconut and you have the milk left. I haven’t done that yet, though someone came to the house and demonstrated for us. They also cook off the milk and are left with coconut oil. Interesting.
Today we were in the van to leave the church where the girls had been doing some filing for their Dad when we discovered that we needed a jump. We called Brother Bennito. The girls were outside enjoying the flowers when his van drove up. They were so happy to see him that one of them waved largely. Then she realized that Brother Bennito hadn’t come at all but had sent someone! Embarrassed by her mistake she took refuge inside the church and laughed at herself.
We’re into the rainy season and the hurricane season. We have rain on most days now, but not all day. We love rain and thunder storms so this is wonderful. ‘Can’t say we’re looking forward to any hurricanes though.
Since our sewing machine isn’t here yet we have borrowed one to make the jackets for the bride’s maids.
Today we previewed a DVD on George Muller for the church library. It was really good. I believe it was put out by Vision Video or Gateway Video.
Some things from the island:
If a store has a sign in the window that says, “Top up here” it means you can add minutes to your phone in this store.
We went to buy thread a couple of days ago and it began to rain. By the time we arrived at the store the water was over my ankles and when I got into the store my skirt was wet up to my knees. Since I love to get wet this was great fun for me.

Wow, that is some interessting food! I love hearing about what you all are doing down there! I am glad you are enjoying the different foods, as well. I have to say, “Fish Head Soup,” would not be one of my favorites to try but way to be BRAVE! : )
